Copper & Cane Distilling is the dream of traditional distiller Guy Dalby. 

While Guy was honing his palate in Tasmania, the dream kept evolving. In 2019 the opportunity to convert that dream to reality happened and Copper & Cane Distilling was born. Guy is now custodian of the historical Normanby Rum Brand. 

An iconic and major rum producer based in Strathpine (where the Westfield Strathpine Shopping centre now sits), from the 1870’s to 1968.  This was an internationally recognised rum distillery who at peak was producing over 5000 litres per day.

Now located in Brendale, production is more artisanal and quality is sought above quantity.  Whilst rum is being distilled in the traditional method with local molasses, Gins are available now. 

Think native botanical, local fruits and native ingredients hand crafted and created in a 300L copper pot still.
